Sometimes you need dinner to be easy and fast to cook, besides being tasty and healthy. Tonight was a night like that for me…
I had a piece of hot smoked salmon and a bag of leafy greens. Both parts very easy to cook, but maybe a tad dry on their own 🙂
So I decided on a celeriac salad, inspired by the french version. Serving it with fixh I changed the traditional mustard for grated lemon zest, sooo good!
The walnuts add a bitter hint that works well with the sweet celeriac. And to make this quick I used store bought mayo.
Celeriac Sallad 4 servings
- 1 celeriac, medium size
- About 100 grams of mayonaise
- grated lemon zest from one lemon
- juice from half of the lemon
- a handful of walnuts
Peel the celeriac and cut in,to match sized strips if you own such a cutter. Otherwise just grate coarsly.
In a bowl large enough to mix the salad, mix mayo with lemon juice and zest, about a teaspoon of salt and some ground pepper.
Add celeriac and stir until all celeriac is coated with dressing.
Taste. Do you need more lemon juice, salt, pepper?
Now break the walnuts wth your hands and stir in almost all. Save some to sprinkle ontop of salad.
I bet som roughly chopped parsley would be tasty in this salad too!
