I recently got a whole bag of apples from my nice neighbour so I have made apple pies using the pie dough from this recipie but yesterday I was in the mood for something different. I made an apple cake and it was delicious! So here is the recipie!
Apples aren’t exactly low carb but once in a while I think it is ok to use a few. This recipie contains a total of two apples so the apple amount of each cake slice is fairly low.
I used coconut cream, the thick stuff you get from a can of coconut milk if you don’t shake it but you could substitute the coconut cream for regular cream or even sour cream if you want to. Feel free to experiment!
The amount of sweetener is fairly small but the apples and the vanilla powder are sweet. Taste the batter and add more sweetener if you want to, or top the cake with som extra sweetener.
I never bother to peel my apples, I think they are pretty with the peel left but you do as you wish!
You could also use other nuts or seeds instead or walnuts, or just omit them totally. Your cake, your decision!
Use a baking pan with sides that come off and wrap it in some aluminum foil to avoid melted butter to leak into your oven.
This cake is delicious on its own but I had it with this vanilla sauce. It would also be good with whipped cream or som sour cream
Now for the recipie. I have given up on translating metric measurements, but you can easily google a translation!
Apple Cake with Cinnamon, Ginger and Walnuts
- 2 eggs
- sweetener equivalent to 3/4 dl sugar, I use birch xylitol
- 100 grams of melted cooled off butter
- 1 decilitres coconut cream
- 2 decilitres almond flour
- 2 teaspoons of baking soda
- 1 table spoon psyllium husk
- 1/2 teaspoon vanilla powder
- 1 teaspoon groundet dry ginger
- 1 coarsly grated apple
- 1 apple in thin slices
- a few walnuts
- cold butter to slice thinly ontop of cake
Set your oven to 175 degrees Celcius.
Butter your baking pan and sprinkle with almond flour. Wrap it in some aluminum foil.
Beat eggs and sweetener until fluffy.
Whisk in melted butter and coconut cream.
Stir in rest of ingredients of the batter. The batter will be fairly stiff.
Spread into your baking pan.
Cover batter with apple slices in a nice pattern. Sprinkle with cinnamon and break som walnuts and spread ontop. Then cover the surface with thin slices of cold butter.
Bake in middle of oven for 20-30 minutes. Cake is done when a tooth pick inserted in the cake comes out clean and the cake is golden brown.
Let the cake cool off and enjoy in slices!
